Spiced cauliflower couscous
Serves 6
1 tablespoon olive oil
1 onion, thinly sliced
1 teaspoon ground coriander
1/2 small cauliflower, cut into small florets
2 tablespoons water (I added more)
1/2 cup coarsely chopped fresh cilantro
1 & 1/4 cups couscous
1 & 1/4 cups boiling water
Heat oil in a large saucepan; cook onion, stirring until soft. Add ground coriander and cauliflower; cook, stirring until fragrant. Add the water; cook until, covered about 10 minutes or until cauliflower is tender and water is absorbed. (I added a little bit water to cook full 10 minutes. ) Stir in half of fresh cilantro.
Meanwhile, combine couscous with boiling water in a large heatproof bowl. cover; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.
Stir cauliflower mixture into couscous, season to taste. Serve sprinkled with remaining fresh cilantro.
Serves with lemon slices.
