About two months ago I posted a recipe with garlicky breadcrumbs, which led me to a new and quite tasty combination for a salad. Taking advantage of summer's seasonal abundance of fresh corn, I decided to try something new.
You can choose any vegetables and dressing you want or like, but a combination of sauteed garlicky fresh bread crumbs with fresh corn will be a superstar in this dish. It gives an unbelievable sweetness, freshness and even fulfillment.
Shave the corn off the cob. In a large skillet over medium heat, warm the oil. Add corn and saute for 1-2 minutes. Add the bread crumb mixture and cook, stirring, until golden, 3 to 5 minutes. Sprinkle the salad. I think this is the perfect way to enjoy summer's sweet corn and many vegetables on a plate.
