Serves 4
1 teaspoon kosher salt
2 teaspoon black peppercorns
2 teaspoons caraway seeds
1 teaspoon coriander seeds
1 teaspoon garlic powder
1 tablespoon light brown sugar
1 & 1/2 pound ground beef
3 tablespoons vegetable oil
2 cups drained sauerkraut
2 tablespoons mayonnaise
2 tablespoons ketchup
1 & 1/2 cups coarsely grated Swiss cheese
Preheat the oven to425 F (220 C).
Place the salt, peppercorn, seeds, garlic powder and brown sugar in an electric coffee grinder or spiced grinder and blitz until finally ground. Place ground beef in a large bowl, sprinkle with the ground spice mixture and use your hands to mix everything together.
Pour vegetable oil in a large skillet and warm over medium heat. Add ground meat and cook steering now and then until browned all over just firm to touch and barely cooked about 8 minutes.
Turn off the heat and stir in sauerkraut, mayonnaise, and ketchup. Evenly sprinkle the cheese on the top of the mixture and tuck the skillet into oven until the cheese is melted and gooey and beef is completely cooked through, about 12 minutes. Serve hot.
