Toasts with chevre and sauteed grapes
The idea of this very simple dish came from Michael Natkin and his very interesting blog. Several months ago I attended his book presentation and learn the idea for my dish. It's easy, good for breakfast and light supper.
Make 10-12 portions. 1 piece of bread - 1 portion
1 small narrow Italian or French loaf of bread
8 ounces fresh, soft chevre (goat cheese)
1 tablespoon olive oil
1 1/2 cups seedless red grapes, halved. If the grapes are not big, you can use a whole ones.
couple drops balsamic vinegar.
Preheat oven on broiler setting. Place a rack approximately 6 inches from broiler.
Slice the loaf of bread, on the bias, into 3/4-inch slices. Place bread in oven on sheet pan and broil until golden brown on both sides, approximately 2 minutes for the first side and 1 to 1 1/2 for second side. Remove to a platter.
Heat 1 tablespoon of the olive oil in a medium saute pan over medium-high heat. When is hot, add grapes and couple drops of balsamic vinegar, saute them for 5 minutes.
Spread goat cheese on toasts and pour grapes over. Serve almost immediately.

Nutty Nutella Rolls
I'm testing some new ideas for Purim. This idea definitely worth to try it. It's easy, absolutely delicious, and a good crowd-pleaser. I think, many of you will try such good recipe.
Nutty Nutella Rolls
16 oz (2 cans) original Pillsbury crescent rolls
½ cup Nutella
½ cup roughly chopped hazelnuts
Preheat oven to 375°F. Spray 6 muffin tins with non-stick cooking spray. Set aside.
Unroll first can of crescent rolls. Pinch seams together to form 1 large rectangle.
Spread Nutella onto crescent dough, leaving approximately 1” space from sides. Sprinkle hazelnuts randomly on top of Nutella.
Unroll second can of crescent rolls. Pinch seams together to form a1 large rectangle. Set dough on top of first layer. Carefully press sides together.
Using a pizza cutter (or sharp knife) cut 6 vertical strips. Twist strips into a coil. Place coiled strips into muffin tins. Bake for approximately 15 minutes or until golden.
Remove from pan and allow to cool slightly before serving.

Shrimp Avocado Salad Lettuce Cups
Makes about 8-10 cabbage cups, serving size is about 2 cups
Ingredients:
1 lb. frozen cooked shrimp, thawed overnight in refrigerator
1 cup finely chopped celery
1/2 cup thinly sliced green onion
1 small head green lettuce
1 avocado, peeled, pitted and diced
Dressing Ingredients:
4-5 Tablespoons mayo
1 Tablespoon fresh-squeezed lemon juice
1 tsp. celery seed
salt and fresh ground black pepper to taste
Instructions:
Thaw frozen shrimp in the refrigerator overnight or longer. Drain the shrimp into a colander that's placed over a bowl. Cut the shrimp into small pieces, chop the celery and thinly slice the green onion. Use a sharp knife to cut the core out of the lettuce and carefully pull off whole lettuce leaves to make cups.
Then whisk together the mayo, lemon juice, celery seed, salt, and pepper. Put the shrimp, celery, avocado and green onion into a bowl and combine with the dressing.
Fill lettuce cups with a generous scoop of the shrimp mixture and serve right away. The shrimp mixture will keep in the fridge for a day or two if you don't eat it all at one meal.

Oколо 8-10 наполненных листьев салата
Ингредиенты:
1/2 кг замороженных готовых креветок, разморозить
1 чашка мелко нарезанного сельдерея
1/2 чашки тонко нарезанного зеленого лука
1 небольшая головка молодого зеленого салата lettuce
1 авокадо, очищенный, без косточки и нарезанного кубиками
Соус
4-5 столовые ложки майонеза
1 столовая ложка свежевыжатого лимонного сока
1 ч. л. семян сельдерея
соль и свежемолотый черный перец по вкусу
Инструкция:
Разморозить креветки. В Американских супермаркетах продаются уже сваренные креветки, которые нужно только разморозить и оторвать хвостики. Нарезать креветки на мелкие кусочки, нарезать сельдерей и зеленый лук. Острым ножом вырезать листья из головки салата.
Перемешать майонез, лимонный сок, семя сельдерея, соль, перец. Положить креветки, сельдерей, авокадо и зеленый лук в миску и смешать с май онезным соусом.
Заполните чашки салата креветочной самесью. Креветочную смесь можно держать в холодильнике в течение одного-двух дней.

Creamy Wild Rice & Mushroom Soup
I would like to say a couple words before introducing such a good winter dish. Growing in Soviet Union, we have never been exposed for variety of soups as a western people. Every winter I learn a lot about soups. This time I decided to make creamy wild rice & mushroom soup. What I can say about this recipe. It's a quite delicious and easy to make. It does not take a lot of time and use ingredients we used to have on hand all year around. I know, many Russian readers don't know a lot about wild rice. Therefore, I would suggest them to read in Wikipedia article about Zizania (Цицания водная)
Creamy Wild Rice & Mushroom Soup
1 tbsp. olive oil
1 lb. white or cremini mushrooms, sliced
1 c. celery, chopped
1 c. carrots, chopped
1 medium shallot, chopped
1/4 c. all-purpose flour
salt + pepper to taste
1/3 c. white wine
1 tsp. thyme
4 c. vegetable broth
1 c. instant or cooked wild rice (I used cooked one)
3/4 c. reduced-fat sour cream
2 tbsp. chopped fresh parsley
Heat oil in a Dutch oven over medium heat. Add mushrooms, celery, carrots, and shallot and cook, stirring often, until softened (5-7 minutes). Stir in flour, salt, and pepper and cook for 2 minutes, stirring constantly. Add white wine and thyme; increase heat to medium-high and cook 2 minutes more.
Add broth to Dutch oven and bring to a boil. If you're using instant rice, add it now and reduce heat to a simmer. Cover and cook until rice is tender, 5-7 minutes, then stir in sour cream and parsley. If you're using cooked rice, once soup has come to a boil, reduce heat to a simmer and stir in rice, sour cream, and parsley.

Перемешать муку, соль и перец, добавить к овощам и жарить в течение 2 минут, постоянно помешивая. Добавить белое вино и тимьян, немного увеличить огонь и жарить еще 2 минуты.
В большую кастрюлю добавить обощной бульон, довести до кипения. Выложить овощную смесь из сковороду в бульон, добавить рис, уменьшить огонь. Накрыть крышкой и варить 5-7 минут. Затем добавить сметану и зелень петрушки. Варить 3-5 минут. Снать с огня и плотно закрыть крышку кастрюли.

Roasted Tomato and Garlic Tart
Roasted Tomato and Garlic Tart
1 pint(s) grape tomatoes, halved
1/2 jar(s) (12-oz) roasted red peppers, cut into ½-in. pieces
3 scallions, finely chopped
2 clove(s) garlic, finely chopped
1 tablespoon(s) olive oil
Kosher salt and pepper
1 (sheet) frozen puff pastry, thawed
3 ounce(s) Asiago or provolone cheese, finely shredded
Green salad, for serving
Heat oven to 400°F. In a large bowl, combine the tomatoes, roasted peppers, scallions, garlic, oil, ½ tsp salt and ¼ tsp pepper. Unfold the pastry onto a piece of parchment paper. Using a rolling pin, roll pastry ½ in. bigger on all sides. Slide the parchment (and pastry) onto a baking sheet. Sprinkle the entire pastry with ⅓ of the cheese. Top with the tomato mixture, leaving a 1-in. border all the way around. Sprinkle with the remaining cheese and bake until the pastry has puffed and is golden brown, 25 to 30 minutes. Serve with a salad, if desired.

Note: As Alton Brown suggests, I place a baking sheet with a tart to refrigerator for 30 minutes before baking. I strongly recommend to add this step to your routine when you deal with puff pastry.

Crab, Avocado and Corn Salad with Cilantro and Lime
Usually I have all ingredients for the salad on hand at home. It takes only 10-15 minutes to put all together and have lunch.
2 cups cooked corn, cooled (fresh, if available, or frozen and thawed, I used a canned one)
1 avocado, cut into 1/2-inch cubes
1/2 pound imitation crabmeat
1/4 cup red onion, finely diced
1/4 cup cilantro, chopped
1 tablespoon olive oil
2 tablespoon mayonnaise (my addition)
zest of one lime
1 1/2 tablespoons fresh lime juice
1/4 teaspoon kosher or sea salt
freshly ground pepper to taste
In a large bowl, combine the corn, avocado, crab, onion, and cilantro.
Mix together the dressing ingredients (oil through pepper) and pour over the salad. Gently toss to mix and taste for seasoning, adding a bit more salt or pepper, if desired.
Garnish with additional cilantro, if desired.

2 чашки приготовленной охлажденной кукурузы (я использовала консервированую)

В большой миске смешать кукурузу, авокадо, крабы, лук и кинзу.
Смешать все ингридиенты для соуса (от оливкового масла до перца) и залить салат. проверить на соль и перец, если нужно, то добавить немного соли и перца. Перед подачей на стол посыпать кинзой.

Fastest Cinnamon Buns
It's the quickest recipe I found for truly American delicatessen. I following the recipe and result is THE EXCELLENT. First of all, the recipe comes from bery trustful source. I highly recommend to use such great resource for all of you. These buns are 'fast' because they are leavened with baking powder and baking soda, not yeast. Read over the entire recipe before you begin - it is not difficult at all, especially if you are organized. The instructions indicate that you should use a springform pan -- a 9" cake pan can also be used.
Yield: 12 buns
Dough Ingredients:
3/4 cup cottage cheese (4% milk fat) or ricotta cheese
1/3 cup buttermilk
1/4 cup granulated sugar
2 oz. (4 tbsp.) unsalted butter, melted
1 tsp. vanilla extract
9 oz. (2 cups) unbleached all-purpose flour; more for rolling
1 tbsp. baking powder
1/2 tsp. table salt
1/4 tsp. baking soda
Filling Ingredients:
3/4 oz. (1-1/2 tbsp.) unsalted butter, melted
2/3 cup packed light or dark brown sugar
1-1/2 tsp. ground cinnamon
1/2 tsp. ground allspice, see note below
1/4 tsp. ground cloves, see note below
1 cup (4 oz.) chopped pecans
Note: add more cinnamon and a dash of nutmeg instead of allspice and cloves, if desired. You may also add mini-chocolate chips, finely chopped apples or dried fruit to the filling.
Glaze:
2-1/2 oz. (scant 2/3 cup) confectioners' sugar2 to 3 tbsp. cold whole or low-fat milk
1 tsp. pure vanilla extract
Heat the oven to 400°F. Grease the sides and bottom of a 9- or 10-inch springform pan with cooking spray. You can also use a 9" cake pan.
Make the dough:
In a food processor, combine the cottage cheese, buttermilk, sugar, melted butter, and vanilla. Process until smooth, about 10 seconds. Add the flour, baking powder, salt, and baking soda and pulse in short bursts just until the dough clumps together (don’t overprocess). The dough will be soft and moist.
Scrape the dough out onto a lightly floured surface and knead it with floured hands 4 or 5 times until smooth. With a rolling pin, roll the dough into a 12x15-inch rectangle.
Make the filling:
Brush the dough with the melted butter, leaving a 1/2-inch border unbuttered around the edges. In a medium bowl, combine the brown sugar, cinnamon, allspice, and cloves. Sprinkle the mixture over the buttered area of the dough and pat gently into the surface. Sprinkle the nuts over the sugar mixture.
Starting at a long edge, roll up the dough jelly-roll style. Pinch the seam to seal, and leave the ends open.
With a sharp knife, cut the roll into 12 equal pieces. Set the pieces, cut side up, in the prepared pan; they should fill the pan and touch slightly, but don’t worry if there are small gaps.
Bake until golden brown and firm to the touch, 20 to 28 minutes. Set the pan on a wire rack to cool for 5 minutes. Run a spatula around the inside edge of the pan and remove the springform ring. Transfer the rolls to a serving plate.
Make the glaze:
In a small bowl, mix the confectioners’ sugar, 2 Tbs. milk, and vanilla to make a smooth glaze. It should have a thick but pourable consistency, so add up to 1 Tbs. more milk if necessary. Drizzle the glaze over the rolls. Let stand 15 minutes and serve.
