Puff pastry pockets with fish filling

500gr puff pastry dough, 800 gr fish filet, 1 hard boiled egg, 1 medium size white onion, 2 tablespoon sunflower oil, salt, pepper, 1 egg yolk, 1 tablespoon water.

To make the filling: Heat sunflower oil in a large saucepan over a medium-low heat. Saute onion for 3 minutes, and add fish filet and continue saute for more 5 minutes until fish just tender. Season with salt and pepper. Mix in hard boiled egg. Taste and add more seasoning (salt, pepper) if necessary. Set this mixture aside to let it cool.

Roll 1 sheet of puff pastry onto a flat surface. The puff pastry, once rolled should be about 1/3 to 1/4 inch and cut into 3x2 inch rectangles. Spread the fish mixture on each rectangle. Close opposite sides of rectangle forming elegant pockets. Repeat with another sheet of puff pastry. Place into refrigirator for 40 minutes.

While the package is chilling, preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with non-stick cooking spray. Remove the fish pockets from the refrigerator, place on a baking sheet and brush each one with mixture of the egg yolk and water. Bak for 30 minutes.

500 г слоеного теста, 800 г рыбного филе, 1 сваренное вкрутую яйцо, 1 луковица, 2 ст.л. растительного масла, соль, перец по вкусу, 1 сырой желток,1 ст. л. воды

Рыбное филе вымыть, обсушить, мелко нарезать и присыпать небольшим количеством соли. Лук очистить. Нарезать лук, яйцо и укроп. На сковороде разогреть масло, обжарить в нем лук, 3 мин. Добавить рыбу и готовить на среднем огне 5 мин. Снять с огня, переложить в миску. Добавить соль, перец, яйцо и перемешать. Разделить тесто на 2 части. На присыпанной мукой поверхности раскатать первую часть в тонкий пласт. Разрезать на прямоугольники размером примерно 6 х 4 см. Раскатать вторую часть теста и разрезать на такие же прямоугольники. На половину прямоугольников положить по 1 ст. л. начинки. Желток развести в воде. Смазать им края теста. Накрыть прямоугольники с начинкой оставшимися. Прижать края.

Разогреть духовку до 200°С. Противень накрыть листом пергамента. Выложить пирожки. Смазать пирожки оставшимся желтком. Выпекать 30 мин.
