Polish Apple Cake (Szarlotka)

It's one of the best recipes. Always successful! You will stick with this recipe FOREVER!!!

3 large apples, unpeeled, cored and sliced into thin slices, 1 teaspoons ground cinnamon, 1 cups sugar, 4 large eggs, 1 cup vegetable oil, 1/2 cup orange juice, 1 teaspoon vanilla, 3 cups sifted flour, 3 teaspoons baking powder, 1/2 teaspoon salt
Grease 9x11 inch pan and dust with flour, shaking out excess. Place apples in large bowl and mix with cinnamon and 2 tablespoons of the sugar.
In separate bowl, beat eggs and gradually add remaining sugar, oil, orange juice and vanilla. Sift together flour, baking powder and salt. Combine with egg mixture and mix until blended.
Pour 2/3 of the batter into prepared pan. Layer with the apples. Pur the rest of the dough. Bake at 350 degrees 45-50 minues until golden on top. Let stand a few minutes and then unmold onto rack. Cool completely.

Makes about 12 servings.

Польский яблочный пирог (Шарлотка)

3 чашки муки, 3-4 крупных красных яблока, 1 чайная ложка молотой корицы, 1 чашка мелкого сахара, 4 яйца, слегка взбить, 1 чашка растительного масла, 3 чайных ложки разрыхлителя, 1/2 чашки апельсинового сока, 2 ч л ванильной эссенции, 1/2 ч л соли

Разогреть духовку до 180 гр С. Смазать квадратную форму маслом и присыпать мукой. Очистить от сердцевины и тонко порезать яблоки, но не очищать от кожуры. Переложить яблоки в миску и смешать с корицей и 2 ст л сахара.

В другой миске взбить яйца, оставшийся сахар, растительное масло, апельсиновый сок и ванильную эссенцию. Просеять муку, разрыхлитель и соль и перемешать с тестом. Две трети теста налить в подготовленную форму. Положить яблоки и залить оставшимся тестом. Запекать около 1 часа до золотистого цвета.

Дать пирогу остыть в форме и дать сокам впитаться. Подавать теплым, порезав на кусочки.
