Do you believe spies can be a good cooks? If YES, try this recipe. By the way, most of americans oftenly forget that America is a land of opportunity. Jews always remember about it. Reading this book, I realized how many Jews work for CIA. In many countries, especially many years ago, it was simply impossible. Let's keep America as a land of opportunity for everyone!

"Passover in Africa
Our first post was in Africa. We arrived in February 1983, and because Passover began in late March that year, we put all our Passover kitchenware in our air freight.
I explained to our cook Simon how on this week we did not eat any bread (among other foods), and that all food must be cooked and served using the special dishes and pots.
The kitchen was carefully cleaned, refrigerator shelves lined, and kitchen counters covered the day before Passover began. So you can imagine my horror when I found Simon dunking his morning baguette in my Passover pot!
I screamed so loudly you could have heard me in Kenya. He realized immeaditely what he had done, jumped up and started scrubbing the pot furiously, as if that would fix his faux-pas. By the end of our three-yeas stay, Simon was a pro at kashering the kitchen and all necessary preparations for the holiday. I remember one Sunday we went to the pool and came back to find the entire kitchen kosher l'pesach. What a joy!
Simon made a mean charoses, matzo ball soup, and matzo kugel. I grew up with apple matzo kugel, but we could not get apples in sub-Saharan Africa in April, so we substituted mangoes.
By the way, Simon also learned to make bagels during the rest of the year. As a service to the bagel-deprived American community, we sold them by dozen-plain, poppy, and sesame. Our bagels became famous all over Africa as word spread about "Barry's Bagel Bakery" (named after our oldest son). I once heard that they had been shipped to Chad on a military support flight and that the Ambassador's wife served them at a brunch.

8 broken into small pieces matzos, 6 eggs well beaten, 1 teaspoon salt, 1 cup sugar, 1/2 cup vegetable oil, 2 teaspoons ground cinnamon, 1 cup chopped walnuts, 2 mangoes, peeled and cut into pieces, 1 cup raisins
Preheat oven to 350F.

Soak matzos in water until soft (usually it takes several minutes). Drain in colander but do not squeeze dry. Beat eggs with salt, sugar, oil, and cinnamon. Add to matzo mixture in large bowl. Stir in nuts, mangoes, and raisins. Pour into well-greased 13x9inch pan. Bake in preheated oven for 45 minutes or until lightly browned. Cool slightly. Cut into squares for serving. Freezes and reheats beautifully."

Пасхальная бабка с манго.

8 кусков мацы поломать на маленькие кусочки, 6 взбитых яиц, 1 чайная ложка соли, 1/2 чашки растительного масла, 2 чайные ложки корицы, 1 чашка мелко нарезанных грецких орех, 2 плода манго, очищенного и нарезанного на мелкие кусочки, 1 чашка изюма.

Нагреть духовку до 350Ф. Залить холодной водой мацу и дать постоять несколько минут. Отцедить воду. Взбить яйца с солью, сахаром, растительным маслом и корицей. Добавить к взбитой смеси мягкую мацу. Все перемешать и добавить орехи, манго и изюм. Поставить в духовку и запекать 45 минут. Бабка должна быть кофейного цвета. Вынуть из духовки, остудить. Нарезать на квадратные порционные куски. Подавать бабку теплой. Остатки бабки можно положить в холодильник и потом подогреть.

I made this for our Seder. In fact, the recipe is so easy that I made it right before the Seder and it baked while I prepared dinner.
It's delicious! I just love this recipe and will make it again, even if it's not during Passover.
