Quick garlicky panzanella - "leftover bread salad"

Serves 2

2 cups French country bread slightly toasted and cut into 1-inch cubes, 3 cups sliced tomatoes (heirloom tomatoes preferable), 1/4 cup chopped red onion, 1 cup thinly sliced cucumbers, 1/2 cup fresh bell red pepper cuted into thin stripes, 2 gloves of garlic.

Vinaigrette: 1 tablespoon cup red wine vinegar, 1/4 teaspoon salt, 1/4 teaspoon pepper, 3 tablespoons olive oil, 1 tablespoon honey, 1 teaspoon lime juice, 1 tablespoon chiffonade mint, 1 tablespoon chiffonade basil

Combine olive oil and garlic in a bowl and mix well. Brush both sides of the bread slices with olive oil mixture. Arrange the slices in a single layer on a baking sheet. Broil for 2 minutes perside or until brown. Cut each slice into 1 inch cubes (excellent shortcut: toast over hot grill or in a toaster and rub with cut garlic before cutting).Combine red wine vinegar, salt and pepper in a bowl, slowly whisk in olive oil and honey in a thin stream until emulsified. Combine all vegetables, dress with vinaigrette, and toss well. Leave for 10 minutes and add bread. Toss again well, garnish with mint and basil. Serve immediately.

Соус: 1 столовая ложка уксуса из красного вина, 1/4 чайной ложки соли, 1/4 чайной ложки свежемолотого перца, 3 столовые ложки оливкового масла, 1 столовая ложка меда, 1 чайная ложка сока лайма, петрушка и базилик (по желанию)

Специально о хлебе для этого салата. Большинство кулинарных экспертов предпочитают использовать "French country bread". Для многих русско-язычных читателей этот сорт хлеба очень знаком - это хлеб, испеченной на дрожжевой опаре с мукой грубого помола.

Смешать оливковое масло и мелко нарезанный чеснок. Помазать смесью 3-4 куска хлеба. Положить хлеб на противень и запечь ("broil") в горячей духовке в течении 2 минут. Вынуть, остудить и нарезать на мелкие кубики (хлеб можно подсушить в тостере, натереть свежим чесноком и нарезать на кубики). Приготовить соус, смешав все ингридиенты.

Уложить нарезанные овощи в салатник. Заправить соусом и оставить на 10 минут. Затем добавить хлебные кубики и хорошо перемешать. Добавить специи по вкусу. Подавать сразу к столу.

Serves 6
4 cups torn pieces of hearty country bread, Salt and pepper, to taste, 1 teaspoon Dijon mustard, 2 cloves of garlic, finely chopped, 3 tablespoons red wine vinegar, or more to taste, 1 red onion, chopped, 3/4 cup olive oil, or more to taste, 8 medium tomatoes, chopped, 1 large cucumber, peeled, halved lengthwise, seeded, and chopped, 3/4 cup pitted Kalamata or other black olives, 1/2 cup chopped fresh basil, 1/4 cup chopped fresh mint, 1/4 cup flat-leaf parsley leaves, 1/2 pound feta cheese
1. Set the oven at 400 degrees. Spread the torn bread pieces on a rimmed baking sheet and season with salt and plenty of pepper. Toast for 15 minutes, stirring once or twice, until they turn deep golden brown. Set aside to cool.
2. In a serving bowl, whisk together the mustard, salt, pepper, garlic, and vinegar. Add the onion and set aside for 30 minutes.
3. Stir in the olive oil, tomatoes, cucumber, toasted bread, olives, basil, mint, and parsley.
4. Taste for seasoning and add more salt, vinegar, or olive oil, if you like. Crumble the feta over the salad in large chunks and toss gently
