Avocado Tart with Pear Filling


Yields 8 medium servings (1 piece per serving)

Dough (recipe comes from Jamie Oliver Recipes)

1 ripe avocados

2 tablespoons extra virgin olive oil

1 & 1/2 cups all-purpose flour, plus extra for dusting

1/4 teaspoon salt

1 teaspoon baking powder

2 tablespoons cold water

Filling

2 large pears, washed and chopped into small pieces

1 tablespoon unsalted butter

1 tablespoon water

couple dashes of salt

1 egg

1/4 cup heavy whipping cream

1 teaspoon rose water (optional)

2-3 tablespoon honey


Halve, destone and peel the avocado. Smash up the avocado.

In a large bowl, add all-purpose flour, salt, baking powder, and salt. Gradually rub avocado in the flour and 2 tablespoons of cold water until you have a dough. Knead until smooth, then wrap and rest for 15 minutes.

Preheat the oven to 350 F (180 C). Prepare a 14"x4.5" long non-stick tart pan with removable bottom. Grease with vegetable oil and spray with non-stick baking spray.

For a filling, heat 1 tablespoon of butter in a frying pan on medium-high heat. Add pear pieces and 1 tablespoon water. Cover and cook on medium heat until pears are slightly tender; about 10 minutes. Remove pears onto a large platter and let sit to cool. In a medium bowl, add egg, heavy whipping cream, honey, rose water and mix well. Add roasted pears and mix well. For the fine texture, use potato masher to mash mixture.

Roll out the avocado pastry on a flour-dusted surface to just under ½cm thick. Loosely roll it up around the rolling pin, then unroll it over a baking pan, and prick the base. Bake for 10 minutes, or until lightly golden. Evenly pour in the filling and bake for another 20-25 minutes, or until set.

Remove from the oven and cool completely. Cut into medium pieces and serve cool with fruits, whipped cream, or powdered sugar.
