Super Healthy Coleslaw (No Mayo, No Oil)

Yields 4 medium servings

1 & 1/2 pounds green cabbage shredded thinly on mandolin

1 & 1/2 teaspoon kosher salt

2-3 teaspoons raw sugar

2-3 tablespoon fresh dill, finely chopped

Fresh lemon juice from 1/3 medium size lemon + more for sprinkling

Add 1 teaspoon kosher salt to shredded cabbage and massage into it until the cabbage is very juicy. Add 2 teaspoons of raw sugar and mix well. Check for spices and add more if needed.

Add dill and lemon juice to a cabbage. Mix well. Place in a medium size bowl, cover with plastic wrap, and refrigerate for about 2 hours.

Remove from refrigerator. Check for spices. Sprinkle with lemon juice before serving. Decorate with pomegranate seeds if they are in season.
