Cherry Coconut Loaf Cake (with walnuts)


Servings: 8-10
Time: 1 hour 30 minutes

165 g unsalted butter
10 ml coconut oil
100 g castor sugar
100 g brown sugar
3 eggs
1 1/2 tsp vanilla extract
300 g all-purpose flour
1/4 tsp salt
1 1/2 tsp baking powder
60 g chopped walnuts (you can use other nuts or even chocolate chips)
110 g cherries (measured after removing seeds)
100 ml full fat coconut cream or coconut milk for a lighter version

Wash and pit your cherries add them into a bowl along with the walnuts, keep aside. Preheat your oven to 160 C. Grease and line an approx 21 cm x 8.5 cm loaf pan.

In a medium-large bowl add the butter, coconut oil and sugars. Whisk well until the mixture gets light and fluffy (you may use a stand mixer or hand mixer). Then add the eggs one at a time, whisking well after each addition, followed by the vanilla.

Sift your flour, salt and baking powder in a bowl. Take two tablespoons of flour and add it to the cherries and walnuts, mix well.

Add the remaining flour into the butter mixture and mix well. Now add the coconut cream, mix well. Finally, fold in the cherry-walnut-flour mixture. Do not over mix.

Pour the prepared batter into the loaf pan and bake at 160 C for roughly 1 hour and 20 minutes. Keep checking after an hour. Once a skewer inserted in the middle of the cake comes out clean, the cake is ready.

Let the cake cool in the pan on a wire rack for 15-20 minutes then remove the cake from the pan to cool completely.
Garnish with more cherries, I added a simple glaze by mixing icing sugar and lemon juice.

Matzoh-Blueberry Icebox Cake


Makes 8 servings

1/2 cup plus 5 tbsp superfine sugar
1 pkg (8 oz) cream cheese, softened
1 3/4 cups heavy cream
3/4 cup frozen wild Maine blueberries, thawed
6 matzohs
Red and blue liquid food coloring ( i did not use)

Line an 8 x 8-inch baking dish with plastic wrap, leaving overhang on 2 sides.

In a glass measuring cup, combine 1/4 cup water and 2 tbsp sugar. Microwave 1 minute, then stir until sugar is dissolved to make a simple syrup.

Beat cream cheese in a medium bowl until smooth. Add 1 cup cream and 1/2 cup sugar. Beat until fluffy and smooth. Fold in blueberries.

Place 1 matzoh in prepared dish, generously brush with simple syrup and spread a generous 1/2 cup blueberry mixture over matzoh to edges. Repeat layering 4 times, top with remaining matzoh and brush liberally with simple syrup. Use overhanging plastic to cover stack, and seal with another piece of plastic wrap. Refrigerate 4 hours or overnight.

Uncover stack and invert onto a plate. Remove and discard plastic. Beat 3/4 cup cream with 3 tbsp sugar and a few drops each of red and blue food coloring to create a purple hue. Spread whipped cream on top and sides of cake and serve.

Creamy Spiced Cauliflower Soup


Serves 6

Aromatics:
1 Tbsp. olive or coconut oil
2 medium yellow onions, diced
1 bay leaf
1 1/4 tsp. ground cumin
1 tsp. kosher salt
1 tsp. ground turmeric
1/2 tsp. ground coriander
1/8 tsp. ground cardamom
dash of ground black pepper
sprinkling of crushed red pepper flakes
4 garlic cloves, minced

Sustenance:
4 1/2 cups vegetable broth
1 large head of cauliflower, roughly chopped to the same size

Conclusion:
1 cup canned coconut milk (I used a light one)
1 Tbsp. apple cider vinegar
fresh dill (for garnish - optional)

In a large soup pot, heat the oil over medium-low. Add all the aromatic ingredients, except for the garlic. Saute, stirring occasionally until the onions become translucent, about 10 minutes. Then, add the garlic and saute another few minutes.

Add the sustenance ingredients and bring to a boil over high heat. Reduce to a simmer and allow to cook for about 15 minutes, until the cauliflower is tender.

Remove from heat and transfer carefully to a blender. Blend on high (allowing steam to vent) for a few minutes, until silky and smooth.

Transfer back to the soup pot and stir in the coconut milk and vinegar. Bring back to heat over low, ensuring it doesn't boil

Serve hot and topped with fresh dill and ground black pepper, if you like.

Для супа:
4 1/2 чашки овощного бульона
1 большая головка цветной капусты, нарезанной на средние куски
1 чашка консервированного кокосового молока
1 ст. ложка яблочного уксуса
свежий укроп (для гарнира - по желанию)

В большой суповой кастрюле нагреть масло на среднем огне. Добавить все специи кроме чеснока. Добавить лук в кастрюлю и тушить около 10 минут. Затем добавить чеснок и тушить еще несколько минут.

Влить бульон и выложить цветную капусту в кастрюлю с луком. Довести до кипения, уменьшить огонь и варить примерно 15 минут пока цветная капуста не станет мегкой.

Снять кастрюлю с огня и осторожно вертикальным блендером превратить содержимое кастрюли в пюре. Если у Вас нет вертикального блендера, то используйте блендер или кухонный комбайн.

Вылить пюре в кастрюлю, добавить молоко кокоса и яблочный уксус. На малом огне довести до кипения, перемешать, проверить на соль и перец и снять с огня.

Подавать горячим, со свежим укропом и молотым черным перцем, если хотите.

Vanilla Cinnamon Roll Quick Bread


Makes 1 loaf

Dough

1 3/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons butter, soften
3/4 cup sugar
2 eggs
1 1/2 teaspoon vanilla extract
3/4 cup milk

Cinnamon Roll mix
1/2 cup each light brown sugar and chopped pecans
4 tablespoons softened butter
1 tablespoon each flour and cinnamon
pinch of salt.

Glaze
1 cup confectioners' sugar
2 tablespoons milk


Preheat oven to 350F. Grease 9" x 5" loaf pan.

Mix all ingredients of Cinnamon Roll mix together in a medium bowl and set aside.

Whisk flour, baking powder and salt. Beat softened butter and sugar with a mixer until fluffy; beat in eggs and teaspoons vanilla, then add milk. Beat in the dry ingredients.

Pour half of the batter into the pan, top with the pecan mixture, then top with the remaining batter.
Bake 55 to 65 minutes.

Whisk confectioners' sugar and milk; drizzle over the warm bread.

Aromatic Cured Salmon (Selyodka style)


Excellent for appetizers, salads, sandwiches and just with beer.

Servings: 4

1 lb salmon fillet sushi grade or previously frozen to -4F or below for 7 days
Salmon Marinade
2 cup water
1/4 cup salt
1/4 cups sugar
1 tsp coriander seeds
1 tsp pepper corns
1/4 tsp red pepper flakes
3-4 bay leaves
1 tsp dry onion flakes
1 tsp mustard seeds
1 tsp pickling spice optional
1 cup oil (I think, 2 tablespoons light olive oil is enough)
1 onion

MAKE THE MARINADE FOR CURED SALMON:
Combine all ingredients for the marinade in a small sauce pot and simmer for 3-4 minutes, then cool completely.

CUT AND MARINATE:
Cut the salmon fillet into 1/2 inch by 2 inch little logs (or any other size and shape you wish).
Combine the salmon and the cooled marinade in a jar, seal with a lid and refrigerate for about 24 hours.
After 24 hours taste the salmon for salt. If it is salted to your liking then, drain the marinade and remove the spices off the fish.
Next, paper towel dry all the pieces, place in a medium bowl, add 1-2 tablespoons of light olive oil add them to a jar.  Shake well and place in refregirator for a couple hours.
If you wish, you could add chopped sweet onion. I usually add the onion right before serving the fish, though.

Notes
Use the best quality fish you can find. It is best to use sushi grade salmon for this recipe, since the curing process might not be enough to make the salmon safe to eat. If using regular salmon, consume at own risk.

If the salmon is not salty enough after 24 hours, place back in the fridge and keep checking periodically, until it is salted to your liking.

If you have left the salmon in the marinade for too long and it is too salty, drain the marinade and fill the jar with boiled and cooled water to draw out some salt. Keep checking every couple hours to see if the flavor is to your liking. Then drain and proceed with the rest of the recipe.

If you do not care for the flavor of spices, you can omit any or all of them. Just combine salt, sugar and the water for the brine.

1 лук

Для маринада:
Положить все ингридиенты для маринада в небольшую кастрюлю, довести до кипения и кипятить на малом огне 3-4 минуты, затем полностью охладить.

Нарезать филе лосося на небольшие полоски. Приготовить чистую стеклянную посуду и выложить куски лосося в нее, залить маринадом. Закрыть крышкой и оставить в холодильнике на 24 часа.
Через 24 часа проверить лосось на соль. Если лосось достаточно просолился, то слить маринад и очистить от специй. Выложить на бумажное полотенце и обсушить. Переложить в чистый контейнер, добавить немного масла и поставить в холодильник на пару часов. Перед подачей можете добавить свежий лук.

Рекоммендации

Используйте рыбу очень хорошего качества. Лучше всего использовать лосось для приготовления суши 

Если лосось не достаточно солен через 24 часа, поместите его обратно в холодильник и продолжайте периодически проверять, пока он не просолиться по вашему вкусу.

Если вы оставили лосось в маринаде слишком долго, и он слишком солен, вылейте маринад и наполните банку охлажденной кипяченной водой. Продолжайте проверять каждые пару часов, чтобы убедиться, что вкус вам по душе. Затем слейте воду.

Если вы не нравится вкус специй, вы можете просто соединить соль, сахар и воду для рассола.

Quick salty cheddar cookies (eggless)


Makes 20-25 2-inch round cookies

1 cup grated on a large holes cheddar cheese
4 tablespoons butter, softened
1 teaspoon sugar
1 cup heavy whipping cream
2 tablespoons parsley or dill, finely chopped
1 & 1/4 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon baking powder
Couple tablespoons milk for brushing
Sea salt for sprinkling

Preheat oven to 350F. Place parchment paper on a big cookie sheet. Grease with vegetable oil and non-stick spray.

In a large bowl, mix cheddar cheese, butter, sugar, and whipping cream. Add parsley and mix again. In a medium bowl, mix together flour, salt and baking powder. Add flour mixture to cheese one.
Make a smooth, soft dough ball and leave in a bowl for 5-10 minutes to rest.

Divide dough into 2-3 parts and rolled out each piece into rectangle 7-8 mm thick. Using 2-inch cutter cut rounds. Place rounds on a baking sheet 1/2-inch from each other. Re-roll the scraps and cut the rounds again. Brush with milk and sprinkle with sea salt.

Bake in a preheated oven until golden brown for 18-20 minutes. Cool until room temperature and enjoy with coffee, tea, salads or even with veggie soups.

Сыр соединить с размягченным сливочным маслом, сахаром и сливками. Добавить в полученную массу измельченную зелен. В отдельной посуде перемешать соль, разрыхлитель и муку. Замесить эластичное тесто и оставить отдычать в посуде на 5-10 минут.

Тесто раскатать в пласт толщиной около сантиметра и круглой формой диаметром 5 см вырезать кружочки. Выложить печенье на противень, смазать молоком и посыпать морской солью.

Печь 18-20 минут до легкой румяной корочки. Вынуть, остудить и подать с кофе, молоком, салатом или даже с овощным супом.

Greek Pasta Salad with Creamy feta Dressing


Yield: 8 servings

1-pound uncooked pasta, such as penne or rotini
1 cup crumbled feta cheese
1/4 cup sour cream
1/4 cup chopped fresh dill (I used parsley)
1 teaspoon dried oregano
1 garlic clove
Grated zest and juice of 1 lemon
1 teaspoon red wine vinegar
1/4 cup extra virgin olive oil, plus more for drizzling
1 English cucumber, cut into 1/2-inch cubes (I like half-moons)
15 grape tomatoes, halved
1 small red onion, thinly sliced
1/4 pound pitted Kalamata olives


In a large pot of salted boiling water, cook the pasta according to the package directions. Strain the pasta and transfer it to a large bowl to cool slightly. While the pasta cools, make the dressing.

MAKE THE DRESSING:

Combine 1/2 cup of the feta with sour cream, dill, oregano, garlic, lemon zest and juice, a pinch of salt, and the vinegar in a food processor and pulse a few times. With the processor running, slowly add the olive oil intil combines and smooth.

Combine the pasta, cucumber, tomatoes, and onion in a large bowl. Add the dressing and toss to coat well. Top with remaining feta and the olives.  Drizzle lightly with additional olive oil just before serving. Season the salad with salt and pepper, to taste.

Tahini-Banana Snack Cake


Serves 8

Be sure to use speckled bananas in this recipe, or your cake will be bland. It is important to let the cake cool completely before serving.

1½ cups (7½ ounces) all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
4 tablespoons unsalted butter, softened
⅓ cup tahini
1¼ cups (8¾ ounces) sugar
2 large eggs
1 cup mashed ripe bananas (2 to 3 bananas)
¾ teaspoon vanilla extract
¼ cup whole milk
2 teaspoons sesame seeds


Adjust oven rack to middle position and heat oven to 350 degrees. Grease 8‐inch square baking pan, line with parchment paper, grease parchment, and flour pan. Whisk flour, salt, and baking soda together in bowl.

Using stand mixer fitted with paddle, beat butter, tahini, and sugar on medium‐high speed until light and fluffy, about 3 minutes, scraping down bowl as needed. Add eggs, one at a time, and beat until combined. Add bananas and vanilla and beat until incorporated. Reduce speed to low and add flour mixture in 3 additions, alternating with milk in 2 additions, scraping down bowl as needed. Give batter final stir by hand.

Transfer batter to prepared pan and smooth top with rubber spatula. Sprinkle top with sesame seeds. Bake until deep golden brown and toothpick inserted in center comes out clean, 40 to 50 minutes, rotating pan halfway through baking.

Let cake cool in pan on wire rack for 10 minutes. Remove cake from pan, discarding parchment, and let cool completely on rack, about 2 hours. Serve. (Cake can be stored at room temperature for up to 2 days.)
