Yemenite Skillet Breads and Black Bean Hummus
Makes 8 breads.

3 cups of whole-wheat flour, 1/2 cup all-purpose flour, 1 teaspoon baking powder, 2 teaspoon spice blend (thyme, oregano, sesame seeds), 1 teaspoon sugar, 1 teaspoon kosher salt, 1 1/4 cup water, or more as needed, 1 large egg, 2 tablespoons extra-virgin olive oil

1/4 cup olive oil for cooking.

Mix together flours, baking powder, spices, salt, and sugar. Whisk in a separate bowl water, egg, and 2 tablespoons of olive oil. With mixer on low speed, add liquids to the flour to create a slightly firm dough. If necessary, add couple tablespoons of water to the ough to correct consistency. Knead the dough until it's smooth and supple (about 7 minutes).

Drizzle a little bit of oil into zip-tight plastic bag. Form the dough into a flat circle, place in the bag, and turn to coat the disk with oil. Let stand at room temperature for at least 1 and up to 2 hours. Dough needs to relax before making the bread.

Divide dough into 8 balls. On an unfloured surface, flatten the balls and roll into 5 1/2-inch rounds.

Add 1 tablespoon oil to a heavy-bottomed medium skillet, and heat over the medium heat. Place a round of dough in the skillet and cook until golden brown on the underside, about 2 minutes. Turn and cook another side for about 2 minutes more. Transfer to paper towels. Repeat with remaining dough, adding more oil as needed. Serve warm

Black Bean Hummus (non-traditional)

Drain one 15-oz. can of black beans and put into a food processor. Add 1/4 cup water, 1/4 cup tahini (sesame paste), 1 peeled crushed garlic clove, 3 tbsp. fresh lemon juice, 2 tbsp. olive oil, 1 tsp. ground coriander, and 1 tsp. ground cumin. Puree mixture about 2 minutes. Season to taste with salt. Transfer hummus to a serving owl and garnish with some paprika and chopped fresh parsley. Makes about 2 cups.

Жаренные лепешки и хумус из черной фасоли.
На 8 лепешек.

3 чашки пшеничной муки грубого помола, 1/2 чашки обыкновенной муки (если нет муки грубого помола, можно заменить обыкновенной мукой), 1 чайная ложка разрыхлителя, 2 чайные ложки специй (тмин, орегано, кунжутных семечек), 1 чайная ложка сахара, 1 чайная ложка соли, 1 1/4 чажки воды, 1 яйцо, 2 столовые ложки олибкового масла

1/4 чашки оливкового масла для поджарки.

Смешать муку, разрыхлитель, соль, сахар и специи. В отдельной посуде смешать воду, яйцо и оливковое масло. Добавить сухую смесь в яичную смесь и замешать эластичное тесто. Если нужно добавить немного воды. Вымесить тесто в течении 7 минут. Смазать внутреннюю поверхность полиэтиленового пакета оливковым маслом и вложить тесто. Закрыть пакет и оставить на 1-2 часа при комнатной температуре.

Разделить тесто на 8 частей, раскатать каждую часть в круг радиусом 12 см.

Смазать оливковым маслом дно сковороды, нагреть на среднем огне. Положить лепешку и жарить 2 минуты на каждой стороне. Если необходимо, то немного добавить масла для жарки. Подавать теплыми.

Хумус из черной фасоли.

Открыть 1 (15oz.) банку консервированной черной фасоли, отцедить воду и положить фасоль в кухонный комбайн. Добавить 1/4 чашки тахини (масло кунжутных семочек), 1 зубец чеснока, 3 соловые ложки сока свежефо лимона, 2 столовые ложки оливкового масла, 1 чайную ложку кориандра, 1 чайную ложку кумина. Посолить и поперчить. Размельчить всю массу в комнайне в течении 2 минут. Украсить мелко нарезанной петрушкой. (Доза: 2 чашки)

I took the recipe from Jeffrey Nathan book only because preparation is simple, and they are good with many anothers recipes. Thanks for the comment.
