Pink Radish Rillettes

Yields 1 & 1/4 cups pate

5 medium pink radishes, grated

1/4 teaspoon salt

1 tablespoon dill, chopped

7.5 oz. (212 gram) cream cheese

1/4 teaspoon lemon pepper (substitution 1/4 teaspoon black ground pepper + zest of the 1/2 fresh lemon)

1/4 teaspoon granulated garlic

1 tablespoon butter, melted

Salt, sugar to taste

Place grated radishes into a colander, sprinkle with salt. Mix and leave for about 20 minutes. Using clean hands, drain water as much as possible.

Add radishes, dill, cream cheese, lemon pepper, granulated garlic, butter into a food processor. Process until all blended. Check for spices and adjust to your taste.

Pour mixture into a medium glass jar, cover, and refrigerate overnight.

Serve with crackers or bread.
