Fresh spinach and fried shrimp salad with Balsamic Dressing


Make 1 portion

Dressing:
1 tablespoon balsamic vinegar
1/2 tablespoon grainy mustard
1/4 teaspoon sugar

Salad:
2 tablespoons plain dry breadcrumbs
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon vegetable oil
20 medium shrimps, cleaned and cooked, without tails
Splash of lemon juice
about 4-5 oz spinach or other greens except lettuce
10 cherry tomatoes, halved
Salt and pepper to taste


It takes only 10-15 minutes to put together a wonderful and flavorful salad.

To make dressing, in a small bowl, mix together vinegar, mustard, sugar and set aside.

In a salad bowl place salad greens or spinach and add cherry tomatoes.  Set also aside.

Use paper towels to pat the shrimp dry. In a shallow bowl, combine the bread crumbs, garlic powder and salt.  Add shrimps, dredge them in the dry mixture and make sure all shrimps are evenly covered.

Preheat oil in  a frying pan and fry shrimps for a several minutes. Remove the shrimps when they are golden brown and slightly curled. Let them drain on a paper towel for 1 minute and pour lemon juice over.

Add shrimps to a salad bowl  with greens and tomatoes and pour dressing. Check for salt and pepper. Serve immediately.
